Sake from Nagano
Nagano sake is known for a rich, full taste with little roughness and a clean, gentle aroma. It is made in a mountain prefecture from local water and local rice, and the whole prefecture holds the GI "Nagano".
KIKI lists 4 producers and 9 bottles of sake from Nagano. The most common type among them is Junmai Ginjo; the most used rice Miyama Nishiki. Well-known brands: Keiryu, Masumi and Daishinshu. The median price is ¥1,496 per 720 ml (130 bottles, as of 1 Oct 2026).

How do water, climate and rice shape Nagano sake?
Nagano is ringed by mountains of up to 3,000 m, including the Northern Alps. Rain and snow become rivers and springs that feed both paddies and breweries. The inland climate brings a wide swing between day and night temperatures, which helps rice store plenty of starch. Sake rice bred in the prefecture includes Miyama Nishiki, Hitogokochi and Kinmon Nishiki. On the yeast side, Kyokai No. 7, isolated at a brewery in Suwa, is used all over Japan, and the prefecture also developed "Alps yeast", known for an apple-like aroma.
What does Nagano sake taste like?
The National Tax Agency's GI standard describes Nagano sake as having little roughness, a rich taste and a clean, gentle aroma in balance. Sweetness and acidity layer over each other, so the sake holds up to strongly flavoured food. It grew up alongside miso and pickle culture, and each brewery still has its own character.
A short history of Nagano sake
Some breweries in the prefecture trace their start to 1540. The main toji (master brewer) lineages are Otari, Suwa and Iiyama, which grew out of winter migrant work. In 1917 the prefecture posted a full-time brewing technician, and in 1941 it opened a prefectural brewing laboratory that advanced techniques and yeasts.
What are the GIs "Nagano" and "Shinano Omachi"?
"Nagano" was designated for sake on 30 June 2021. It must use only rice and water from the prefecture, and be brewed, stored and bottled there. The Nagano Appellation Control Committee checks each product before shipment. "Shinano Omachi" followed on 30 June 2023. In addition, it allows only four rice varieties grown in set paddies in Omachi and Matsukawa, and koji is made in small batches in koji rooms inside the area.
Where are the breweries?
The GI Nagano site introduces 78 breweries in the prefecture. Each basin has its own climate and water, and breweries are found in Suwa, Saku, Matsumoto, Omachi, Iiyama and elsewhere.
Visiting and what to eat with it
The prefectural brewers' association publishes guidance for brewery visits. Many breweries need a reservation, so check the official sites first. This is a land shaped by preserved foods such as miso and pickles, and its sake is said to go well with sweet-savoury dishes and, around Omachi, with bitter wild mountain vegetables.
