Shigaizumi Shuzo (志賀泉酒造株式会社)
Shigaizumi Shuzo is a sake brewery in Nakano, Nagano Prefecture, making local sake with rice from Kijimadaira and spring water from the same area.
What kind of brewery is Shigaizumi Shuzo?
The company began in 1960 as a joint bottling facility shared by eleven local brewers under one tax office district. It started making its own sake in 1963. In 2009 it switched its brewing water to a spring in Kijimadaira Village, and the brewery says the sake improved. The current toji took over in 2009 when his predecessor retired due to age, and he works with a small crew.
