Sake and shochu from Ibaraki
Ibaraki sake changes with the river system that supplies each brewery's water, so styles vary from one brewery to the next. The prefecture also promotes "Pure Ibaraki" sake made with its own rice, Hitachi Nishiki, and Hitachi yeast.

How do water and climate shape Ibaraki sake?
The Ibaraki Sake Brewers Association groups brewing water into five river systems: Kuji, Naka, Tsukuba, Kinu and Tone. The Kuji flows from the foot of Mount Yamizo to the sea at Hitachi, the Naka rises on Mount Nasu, the Tsukuba system centres on Mount Tsukuba and the area south of the Kasama and Iwase basins, the Kinu runs through the western brewing district, and the Tone lies in the south. Each brewery draws on its own source.
Which local rice, yeast and brewmasters?
Hitachi Nishiki is the first sake rice developed by Ibaraki Prefecture, in 2003. The association presents "Pure Ibaraki", a junmai sake made with this rice and Hitachi yeast. From 2026 the prefecture's own varieties Fukumaru, Ichibanboshi and Yumehitachi are added. In 2019 the association also started a certification for local brewmasters called Hitachi Toji.
What does Ibaraki sake taste like?
It is hard to sum up the whole prefecture in one taste, and the association itself stresses each brewery's own character. Its member pages describe a brewery aiming for light, dry sake made with soft water, and another that makes kimoto and yamahai styles with meat and oily dishes in mind. Check the label for the type before you choose a bottle.
A short history of Ibaraki sake
The association describes Ibaraki as a Kanto sake region with many breweries since the Edo period. In Yuki, one brewery says it was founded in the Keio era, and some brands are named after the Yuki silk that the town is known for. The prefectural association was set up in 1953.

Breweries sit in Yuki and Joso on the Kinu system, Hitachi-Ota on the Kuji, Mito and Naka on the Naka, Kasama, Ishioka, Tsukuba and Chikusei on the Tsukuba system, and Itako, Toride and Koga on the Tone. The association's site lists them by river system.
Visiting and what to eat with it
Brewery visits vary: some need a reservation, some are free, and some are not open at present. Check each brewery's official site or phone first. Local foods include Mito natto and monkfish hotpot. Lighter sake suits seafood and hotpots, and fuller styles go well with meat.
