Tanaka Shuzoten (株式会社田中酒造店)
Tanaka Shuzoten is a sake brewery in Toride, Ibaraki Prefecture, producing the Kimibandai brand. It was founded in 1655.
What kind of brewery is Tanaka Shuzoten?
Located in the old post town of Toride, the brewery has made sake since its founding in 1655, drawing on Tone River subsoil water and nearby grain-growing land. Tradition holds that the Kimibandai name came from the Meiji Emperor, who drank water from the brewery's well in 1884. Brewing stresses handwork, including rice washing, steaming in traditional kettles and koji making in a koji room. Because of a shortage of Nanbu toji successors, from the 21st brewing year the brewery has brewed with only its own year-round staff.
- Water
- Uses abundant subsoil water that passes through the Tone River gravel layers.
- Master brewer
