What kind of brewery is Shiina Shuzoten?
The brewery was founded in 1877 and kept brewing with the help of various toji. In the early Heisei era the previous head became kuramoto-toji and began brewing with his father, and the character of today's Fukugokoro grew out of their trial and error. The sixth-generation owner has since taken over. The guiding aim is to brew rich, crisp sake from clear water springing up on the grounds and carefully chosen rice, to support the local community.
