Sudo Honke (須藤本家株式会社)
Sudo Honke is a sake brewery in Ohara, Kasama, Ibaraki, making only unfiltered junmai daiginjo from rice grown entirely in Kasama.
What kind of brewery is Sudo Honke?
The brewery was founded in Hitachi Province, present-day Kasama. Its location, Ohara, is described as one of the birthplaces of Ibaraki, and earthworks of a lowland castle remain on the grounds. Unlike typical breweries, it began as a samurai family's venture to energize the local rice-based economy by processing primary products. In 1973 it started selling aged sake, namazake and hiyaoroshi, and in 1995 began exporting to the USA.
- Style
- The brewery does not use carbon or other artificial filtration, so its sake is unfiltered. No sake with added brewing alcohol is made.
- Ingredients
- Brewing now uses 100% locally grown Koshihikari from Kasama. Only new rice within five months of harvest is used, and it is polished only in the cold winter season.
- Other
- Brewing is done only in the depth of winter.
