Sake and shochu from Fukuoka
Fukuoka sake tends to be rich in rice sweetness and umami with an expressive aroma, a style that grew up beside the region's sweet-savoury food. Fukuoka sake received the GI "Fukuoka" in 2025, and barley shochu is made here too.
KIKI lists 13 producers and 38 bottles of sake and shochu from Fukuoka. The most common type among them is Barley shochu; the most used rice Yamada Nishiki. Well-known brands: Hakata no Hana, Fukutokucho and Kanoka. The median price is ¥1,373 per 720 ml (144 bottles, as of 1 Oct 2026).

How do water, climate and rice shape Fukuoka sake?
Rivers such as the Chikugo, Yabe and Onga bring soft to medium-soft water down from the hills, which slows fermentation. The National Tax Agency's GI document adds that the Sea of Japan side has cold but dry winters with little snow, which helps grow a strong koji that dissolves the rice well. The prefecture names sake rice such as Yumeikkon from Mizuma, Gin no Sato from Yame, Jugemu from Yanagawa and Yamada Nishiki from Itoshima.
What does Fukuoka sake taste like?
The GI document describes Fukuoka sake as generally fragrant, rich in umami, with a clean finish. It says the style evolved to sit beside dishes like sesame mackerel, spicy cod roe, motsunabe and chikuzenni without overpowering them. Each brewery still has its own character.
A short history of Fukuoka sake
Fukuoka was already known for sake in the Heian and Kamakura periods, and the GI document records 613 breweries in old Chikuzen in 1690. By the early 1800s the Mizuma and Keya brewmaster groups had formed, described as the oldest in Kyushu. In the Meiji era sake from the Kansai region pushed local brewers back. In 1889 Kobayashi Sakugoro of Kasuya founded the prefectural brewers' association and spread shared know-how. A method suited to soft water, growing the koji carefully and fermenting slowly at low temperature, then spread.
What is the GI "Fukuoka"?
It was designated for sake on 1 October 2025. Sake must use only Japanese-grown rice and rice koji and water taken inside the prefecture, and be brewed, stored and put into its final container in Fukuoka. A committee at the Fukuoka Sake Brewers Association checks it before use.
Where are the breweries?
Breweries are spread widely, with clusters in the Chikugo area (Kurume, Yame, Yanagawa, Mizuma), plus Itoshima and Kasuya. The prefecture's brewers' association was described as having 68 member breweries in February 2021.
What about shochu?
Fukuoka grows barley, and many local shochu are made from prefectural barley. Some use sesame or gyokuro tea. Barley shochu is registered as a regional collective trademark under the name Hakata Shochu. For the wider picture see Shochu and awamori regions.
Visiting and what to eat with it
Tours and tastings differ by brewery and often need a reservation, so check official sites first. Some breweries hold open days in spring. Sesame mackerel, spicy cod roe, motsunabe and chikuzenni all suit a rich, slightly sweet sake.
