History
Kitaya was founded in 1820 (Bunsei 3) in Yame by the first Kinoshita, who took the shop name Kitaya from the wish to spread joy through sake. Since the founder brewed as toji himself, the house rule that the owner should make the sake has been kept. The brewery uses groundwater of the Yabe River. The seventh-generation president is Kotaro Kinoshita, and the next head, Risako Kinoshita, works on projects such as a new yeast.
