What kind of brewery is it?

The brewery was founded in 1735, beginning with water from the Yabe River and rice from the Chikugo plain. In 1900 Kayo, the elder sister of the poet Kitahara Hakushu, married into the household of the sixth-generation owner. During the war the brewery was requisitioned as a navy parts factory and closed for two years. As other Setaka breweries shut down, it became the last one remaining, dropped efficient machine pressing and moved to hand-stacked boat pressing for all its sake. Each winter it holds a new-sake open-house event.

What makes it distinct

Style
Two hand-managed pressing methods are used: drip filtering and boat-press filtering. For boat pressing, sake bags are stacked by hand in the press and only the first flow is used.
