Sake from Akita
Akita sake is shaped by long, snowy winters and slow, cold fermentation, and many bottles are plump with the flavour of rice yet not heavy.
KIKI lists 8 producers and 18 bottles of sake from Akita. The most common type among them is Junmai; the most used rice Yamada Nishiki. Well-known brands: Yuki no Bosha, Kitaakita and Kitaakita. The median price is ¥1,372 per 720 ml (136 bottles, as of 1 Oct 2026).

How do water, climate and rice shape Akita sake?
Akita has a long snowy winter, and snowmelt gives soft brewing water. The cold air suits slow fermentation. Sake rice includes Miyamanishiki, a large-grain variety with a clear starch core, and the prefecture's own Akita Sakekomachi. Table-rice varieties such as Akitakomachi are used for everyday grades. Akita is well known as a rice-growing region with good soil.
What does Akita sake taste like?
In broad terms, many Akita sake are smooth, with the sweetness and umami of rice but a finish that is not heavy. The soft water gives a gentle mouthfeel, and some ginjo sake have a bright aroma. Each brewery has its own style though, and you will find dry, sweet and rich bottles alike.
What is the "Akita style" of brewing?
Brewing starts around November and is busiest from December to February. Fermenting at low temperatures over a long time is called Akita-style cold, long fermentation, and it is said to give a rounded sake with few rough edges. In 1990 the prefecture and the brewers' association also finished their own yeast, AK-1.
A short history of Akita sake
In 1930 a yeast was collected at a brewery in Akita City that later became Kyokai No. 6, distributed to breweries all over Japan. It is one of the oldest sake yeasts still in use. Among brewmasters, the Yamauchi toji from Yokote are well known. The brewers' cooperative notes that wartime consolidation cut the number of breweries in the prefecture from 125 to 48 in 1943.
Where are the breweries?
The brewers' map groups breweries into five areas: the north, the centre, Daisen and Senboku, Honjo and Yuri, and Yokote and Yuzawa. Many breweries are in the south around Yokote, Yuzawa and Daisen, in and around Akita City, and in Yurihonjo. River water and rice differ slightly from place to place.
Visiting and what to eat with it
Many breweries need a reservation for tours, and some give tours on weekdays only, so check the official sites and the tourism association's page. Buses and trains are infrequent, so check timetables. Umami-rich local food goes well with Akita sake: kiritanpo hot pot, iburi-gakko smoked pickles and hatahata fish.
