History

The brewery was founded in 1901 and brews with natural spring water from the Shirakami mountains. Yamamoto Tomofumi, the sixth-generation owner, returned to the family business in 2002, moved away from the traditional toji system and made every brewer responsible for the sake. The rice is milled in house, koji is made in a sterile room, and yeast is chosen to suit each rice. The local brand Shirataki has long been loved nearby, and the Yamamoto brand has grown at home and abroad. The site also has a lab and cafe and a guesthouse.
