Dewatsuru Shuzo was founded in 1865 by Ito Jushiro, 12th head of the Ito family, as Yamato Shuzoten, and became Dewatsuru Shuzo Co., Ltd. in 1913. It uses soft brewing water from the mountains around the brewery and Akita-grown rice such as Miyamanishiki, Akita Sake Komachi and naturally grown Sasanishiki, from its own fields and contract farmers. It is known for Akita-style kimoto brewing with low-temperature, long fermentation. Tours are by reservation outside the brewing season, weekdays 9:00 to 17:00.
