What kind of brewery is it?
The brewery was founded in 1907 (Meiji 40) by the first head, Sato Hisakichi, at the foot of Mt. Chokai in Yashima, Yuri Honjo. The name Dewa no Fuji comes from the mountain's beautiful shape, likened to Mt. Fuji in the old province of Dewa. It is mainly loved in the local Yashima area.
What makes it distinct
- Water
- The Tenno Bimei daiginjo is brewed with water from Mt. Chokai.
- Ingredients
- Some sake is made with Ginsan, a sake rice grown in Akita.
- Yeast
- Some junmai sake uses the brewery's own isolated yeast, Akita Kura-tsuki Bunri Kobo San-ban.
