Sake and shochu from Saga
Saga sake is known for full rice flavour and a soft, spreading sweetness, a rich but savoury style that stands up to strongly seasoned food. In 2021 it became the first sake in Kyushu to receive a geographical indication (GI), "Saga".

How do water, climate and rice shape Saga sake?
Saga faces the Genkai Sea to the north and the Ariake Sea to the south. Underground water runs down from the Sefuri mountains and Mt. Tara, and rivers such as the Chikugo and Kase built the wide Saga plain. The mild climate made it a major rice-growing area for centuries. The National Tax Agency's GI document says this supply of good rice and water made brewing easy from early times.
What does Saga sake taste like?
The GI document describes it as generally full of rice umami, mellow on the palate, with sweetness that spreads across the mouth. Junmai, ginjo and similar grades leave a lingering aroma and then a clear savoury finish. Some bottles are crisp and dry or fruity, so breweries differ.
A short history of Saga sake
Tradition says "Hizen sake" was presented to the shogunate in the Kamakura period. Brewing grew strongly in the late Edo period, when Nabeshima Naomasa, lord of Saga, is said to have encouraged it to repair the domain's finances. Sake travelled along roads such as the Nagasaki Kaido to other parts of Kyushu. In 2004 the prefecture created its own appellation system: sake made with 100% Saga rice and water that passes a tasting is certified as "The SAGA Nintei-shu".
What is the GI "Saga"?
It was designated for sake on 14 June 2021. Sake must use only Japanese-grown rice and rice koji and water taken inside the prefecture, and be brewed, stored and put into its final container in Saga. Sake outside the special-designation grades must also meet a numeric sweet-dry value above zero. A committee at the Saga Sake Brewers Association checks each product. If a label also carries "The SAGA Nintei-shu", only rice harvested in the prefecture may be used.
Where are the breweries?
In Kashima, the old post town of Hizen-Hama has a "brewery street" and still has six breweries. Others are in Ureshino, at the foot of Mt. Tenzan, around Imari and Arita, and elsewhere: more than 20 in the prefecture.
Visiting and what to eat with it
Kashima's breweries hold a joint open house every March, and Ureshino has its own brewery event. Tours and tastings vary by brewery, so check official sites, and never drink and drive. Strongly seasoned and sweet-savoury dishes are said to suit it, and yudofu in Ureshino is a fitting partner.
