Sake and shochu from Iwate
Iwate sake has a soft mouthfeel and a rich rice umami, and it rests on the skill of the Nanbu toji, one of the largest brewmaster groups in Japan.

How do water, climate and rice shape Iwate sake?
Iwate lies between the Kitakami Highlands and the Ou Mountains, with the Kitakami River and clear springs across the prefecture. The National Tax Agency's GI standard says the mineral-rich underground water helps yeast and koji do their work. Some inland areas fall below minus 20 degrees in winter, and this cold suits long, low-temperature fermentation. The prefecture developed cold-tolerant sake rice (Ginginga, Ginotome and Yui no Ka) and its own yeast and koji strains.
What does Iwate sake taste like?
The GI standard describes Iwate sake as soft on the palate, with rice umami that spreads gently and a fresh aroma of green bamboo or new leaves. Junmai ginjo and ginjo are said to add juicy notes of green apple and pear. It works well as a food sake, including with warm regional dishes, but each brewery has its own style.
A short history of Iwate sake
In 1678 a merchant from Omi began brewing in Shiwa (now the town of Shiwa) and brought craftsmen from the Kyoto and Osaka area. This is described as the start of the clear sake brewing that led to today's sake. Farmers went to work elsewhere in the off-season and became known as the Nanbu toji. After the 2011 earthquake, "All Iwate Sake", made only from Iwate rice, koji mould and yeast, was promoted as a symbol of recovery.
What is the GI "Iwate"?
It was designated for sake on 25 September 2023. Sake must use only Japanese-grown rice and rice koji, water taken inside the prefecture, and be brewed, stored and put into its final container in Iwate. Using the words "All Iwate Sake" additionally requires rice grown in Iwate and koji mould and yeast bred in Iwate. The GI Iwate Management Body checks each product before shipment.
Where are the breweries?
The travel site Iwate no Tabi presents sake by area: Morioka, Shiwa, Hanamaki, Ichinoseki, the Sanriku coast and the north. Breweries are spread from the inland towns to the coast, including Hanamaki and Shiwa, the home of the Nanbu toji, and water and climate differ from area to area.
Visiting and what to eat with it
The Nanbu Toji Museum in Hanamaki shows brewing tools and the history of the toji, and has a paid tasting corner. Many breweries need a reservation for tours, so check their official sites. The GI standard names warm regional dishes such as hittsumi, a soup with dumplings and vegetables, as a good match.
