Sake from Toyama
Toyama sake is made with clean water from the Northern Alps, including the Tateyama range, and much of it is smooth, mellow sake that pairs easily with seafood. The prefecture's brewers also point to a high share of sake-specific rice.

How do water and climate shape Toyama sake?
The prefecture has clear meltwater and groundwater from mountains of up to 3,000 m. Water quality ranges from hard to soft, and each brewery uses its own local water for brewing. That difference shows in the taste from brewery to brewery.
What sake rice does Toyama use?
The prefectural brewers' association lists a very high use of sake-specific rice as a hallmark. Oyama Nishiki, an early-ripening variety bred by the prefecture, has large grains and a shinpaku (white core) that appears readily, and suits highly polished ginjo sake. Sake made entirely with it exists. Other prefectural varieties such as Tomi no Kaori are also grown.
What does Toyama sake taste like?
According to the association, the range runs from rich, dry, crisp sake to smooth sake, but "mellow and clean styles are common" and go with almost any dish. Breweries make aromatic, light and smooth, and full-bodied styles.
A short history of Toyama sake
The association says most breweries were founded between the Edo and Meiji eras. Locals drink a lot of local sake, and breweries have aimed for tastes that suit local dishes. In 2022, sake from 14 breweries was stored inside Kurobe Dam and brought out in 2024.
Where are the breweries?
Tourism authorities introduce 19 breweries in the prefecture. Examples include Yatsuo in Toyama City, known for the Owara Kaze no Bon festival, Ikuji in Kurobe with its spring water, the World Heritage village of Gokayama, and the port town of Himi.

Tour rules and reservations vary by brewery, so check the official sites. The association runs a "Toyama sake and sushi" series in which each brewery pairs its sake with a sushi topping from Toyama Bay. One brewer in Kurobe says clean sake is meant for white-fleshed fish.
