What kind of brewery is it?

History

Founded in 1916, the brewery marked its centenary in 2016. Fumigiku, its original brand since the start, is meant to evoke sake as beautiful as Toyama's chrysanthemums. The current head, Hane Keiki, returned to the family business after working at a fermentation company in Tokyo and, encouraged by the toji of the time, moved to making all sake with the same care as daiginjo. It brews with water from the Jogan River system, one of Japan's hundred famous waters, and brews year-round. It also works with Toyama-grown Tominoka rice.
