Sake from Tokushima

Tokushima sake is made with the clear, soft water of the Yoshino River and the local Awa Yamada Nishiki rice, and it values the flavour of the rice. There is also a certified brand, "Awa Juwari", made only with Tokushima rice and water.

What are Tokushima's water and climate like?

The prefecture's brewers' association says that Awa sake comes from the mineral-rich yet soft water of the Yoshino River, rice grown on terraced fields at the foot of mountains with wide day and night temperature differences, and the skill of the toji. In the west, some breweries use subsurface water from the mountains around Mount Tsurugi and Iya.

Which rice and yeast does Tokushima use?

Yamada Nishiki grown in Tokushima is called Awa Yamada Nishiki, and the association says breweries around Japan value it. The prefectural technology centre improved a sake yeast with ultraviolet LEDs, and selected the "LED Yume" yeast for its fruity aroma and strong fermentation.

What does Tokushima sake taste like?

There is no single style. Brewery notes talk about natural flavours that bring out the rice, and sake that acts as a supporting player at the table. Sake brewed with the LED Yume yeast has a light, fruit-like aroma.

A short history of Awa sake

Historic breweries remain, including one in Naruto that has been going for over 200 years. Seitama in Tokushima City opens its nationally registered cultural-property brewery building as a shop and a soba restaurant. The present prefectural brewers' association was formed by a merger in 1997.

What is "Awa Juwari"?

"Awa Juwari" is junmai sake made only with sake rice grown in Tokushima and water taken in the prefecture, brewed at a Tokushima brewery. The brewers' association examines taste, aroma and balance before certifying it.

Where are the breweries?

Breweries are scattered mostly along the Yoshino and Naka river basins, in Tokushima City, Naruto, Anan, Mima, Miyoshi and Itano District. The association's list also includes distilleries making sweet potato shochu from Naruto Kintoki potatoes.

Several breweries marked as open to visitors by the association are in Tokushima City, Anan, Naruto, Mima, Miyoshi and Itano District. Contact them beforehand. Local food listed by the association includes hamo (pike conger) and Tokushima ramen. You can combine a visit with the Awa Odori dance or the Iya vine bridge.
