History
The brewery traces its start to 1548, when its predecessor Wakamatsuya began brewing in Settaya, a town of brewers. Water rising on the grounds combines Shinano River subsoil water with snowmelt from the Higashiyama range. Even in the rice-short wartime years the brewery kept ginjo-style brewing as its base. Today it makes everything from everyday to seasonal sake, plus some shochu and liqueurs, and the grounds hold the Johgura sake museum in a restored 1920s building.
