What kind of brewery is it?

History

Goro Kishi founded the brewery in 1897 as Kishi Goro Shoten. The brewery says that Goro Seki, a brewing technician who married into the family, established the sokujo-moto method of making the yeast starter with lactic acid, and it still uses it throughout. It keeps filtering and charcoal light and aims for a refined, not cloying sweetness. Since 1996 it has contracted farmers in Yamakoshi for a junmai ginjo, a project that also supports recovery after the 2004 Chuetsu earthquake.
