What kind of brewery is Niigata Ichiryu Shuzo?

Founded in 1908, the brewery began brewing on its present site at the minimum licensed capacity of 300 koku. In the early Showa period it changed its tanks from wooden vats to enamel tanks and began selling bottled sake, which raised output sharply. During the wartime controls it kept operating as a plant under the wartime economic system. Koburo Shuzo Co., Ltd. was established in 1950, and the Koshino Bairi brand was launched in 1983. The Kayama brand was introduced in 2009. The company later went through the names DHC Koburo Shuzo and DHC Shuzo, and was registered as Niigata Ichiryu Shuzo Co., Ltd. in April 2026.

Ingredients

The brewery uses 100% Koshitanrei grown by local contracted farmers. Yuten uses Gohyakumangoku for koji rice and rice grown in Niigata Prefecture for kake rice.
