What kind of brewery is Higashi Shuzo?
Higashi Sake Brewing was founded in 1860. The current head is the seventh generation of the family. After a fire in 1936 the brewhouse was rebuilt in 1949 using stone quarried from a local mountain. In 2009 the brewhouse and residential buildings, twelve structures in total, were registered as tangible cultural properties. The Shinsen name comes from the spring water from a neighboring shrine used in brewing.
