What kind of brewery is it?

History

In 1839 the first Sasaya Mozaemon, who had branched off from a shipping merchant house in Niigata's Kitamae-bune trading days, began brewing sake to send Niigata's famed product to Hokkaido. The name Hakuryu, or white dragon, is said to honour the sea god and pray for local prosperity. Set in a rice-growing area of the Agano River system, the brewery carries on Echigo toji techniques alongside modern equipment, aiming for light and dry Niigata-style sake. Its range runs from daiginjo to seasonal sake and liqueurs.
