What kind of brewery is it?

History

Fukumitsuya was founded in Kanazawa in 1625 (Kan'ei 2) and marked 400 years in 2025. It brews with water it calls Hyakunen-sui, rain and snow from the foot of Mount Hakusan that seeps about 150 metres underground over roughly a century. It has grown rice under contract since 1960, including Yamada Nishiki from Hyogo, Gohyakumangoku from Toyama and Kinmon Nishiki from Nagano. It makes junmai sake only, and its own shop offers tastings.
