History
Founded in 1717, the brewery stands on Makinoto street in the Shiozawa post town of the Mikuni road. The present head is the twelfth generation. Its main brand Kakurei is said to have been named by Suzuki Bokushi, author of Hokuetsu Seppu. The brewing water is subsoil water from Mount Makihata, drawn from a well about 80 m deep on the grounds; it is soft but slightly higher in minerals than most Niigata water. It uses local Minamiuonuma sake rice and Echigo toji skills for a light, flavourful style, and also makes some shochu.
