What kind of brewery is it?
The brewery started making sake in 1806 in Eiheiji, Fukui. In 1948 it also began growing Yamada Nishiki rice in Eiheiji. In spring 2015 the owner's second daughter joined, and a toji-led system with the brewery's toji as head of production began. In autumn 2017 she became a female toji at the age of 24, and the brewery now makes only pure sake from rice and rice koji. In 2023 the new brewery Yoshimine-kura was completed, and the company became a kabushiki kaisha that year. In 2024 the brand name was changed from Hakuryu to Eiheiji Hakuryu.
