What kind of brewery is it?
History
Toko Aso founded the brewery in 1864 under the name Funakoya. The third generation, Kanpachi Aso, took over the family business at 15 and re-established the brewery in 1885 with the minimum 100 koku licence. Working with the toji Shikataro Nakama, he moved from a brand called Ryumon, after a local waterfall, to Yatsushika, combining characters from both men's names. The fifth generation built what the brewery calls Japan's first reinforced concrete brewery and the sixth developed Ginza no Suzume shochu. It uses spring water from the Kokonoe mountains flowing through the Kusu basin.
