Yamanomori Shuzojo (有限会社山の守酒造場)

Yamanomori Shuzojo is a shochu distillery in Iki, Nagasaki, making kame-jikomi (pot-fermented) barley shochu such as Yamanomori, with atmospheric pot-still distillation. It was founded in 1899.

What kind of distillery is Yamanomori Shuzojo?

Home brewing became licensed in 1898 (Meiji 31), and the distillery began the following year, in Meiji 32. Iki shochu itself began when islanders, who paid rice as tax to the Hirado domain and lived on barley, made shochu from the surplus. The business was reorganized as a company on 7 October 1954. The distillery stands on the northern foot of Mount Takenotsuji in the south of the island and keeps kame-jikomi and atmospheric distillation.

Style
Both first and second mashes are made in pots, then distilled at atmospheric pressure in a pot still.
Ingredients
Yamanomori uses one third rice koji and two thirds barley.
Water
Good-quality groundwater is used.
