Uno Shuzojo (株式会社宇野酒造場)
Uno Shuzojo is a sake brewery in Ono, Fukui Prefecture, making the Ichinotani brand, centered on Daiginjo from Yamada Nishiki alongside junmai and honjozo.
What kind of brewery is Uno Shuzojo?
The brewery began using Yamada Nishiki, a rice suited to Daiginjo, more than thirty years ago. At the time few breweries in the prefecture made Daiginjo and the rice was hard to get at about double the usual price, so it opened its own supply route. Today it buys the rice through regular channels, though the price per bale remains high. Brewing water is the spring water called Oshozu, drawn from more than 30 m underground in Ono.
