What kind of brewery is Umetsu Shuzo?
The brewery began brewing in 1865 in Ōtani, Hōki. The third generation named its flagship Fure after a cheer, and the fourth created a shochu from local sand-dune nagaimo yam. The fifth generation formed a group with local farmers to grow rice, and started Umaigana, a pure rice sake aiming for no pesticides. From the 2005 brewing year the brewery stopped adding brewing alcohol and makes all its sake from rice and koji only.
