Toshimori Shuzo was founded in 1868 in the former Karube village, now part of Akaiwa City in Okayama. Omachi rice grown in Karube was once rare, and the fourth master decided in the Showa 40s to bring it back. The fifth master, invited as toji, spent more than 25 years on the revival and on brewing in large Bizen-ware jars. Today the brewery also grows Omachi on its own paddies and handles the work from rice to bottle.
