What kind of brewery is it?
Tokoro Shuzo was founded in the early Meiji period, on the upper reaches of the Ibigawa river in the Seino area of Gifu Prefecture. The family has carried the brewery through its second and third generations. For many years its main brands were Sakurachiyo no Haru and Ibi no Kura. In 2000 it launched the Bojimaya brand, which is now the brewery's flagship. Most of its sake is junmai, and all of its unpasteurized sake is sold as unfiltered undiluted genshu. The company was incorporated on 30 September 1934.
What makes it distinct
- Style
- About nine-tenths of the output is junmai sake, made only from rice, water and microorganisms. All of the unpasteurized sake is sold as unfiltered, undiluted genshu. Apart from the pasteurized aged junmai, all of the sake is genshu.
- Yeast
- The junmai ginjo hiyaoroshi uses G2 yeast, the Gifu yeast.
