What kind of brewery is it?

History

The brewery was founded in 1893. Its first head, who ran a shipping wholesale business, learned brewing from the Sakai family of the Shonai domain and sold sake under the name Kinkyu; in the early Showa era the brand became Hatsumago to celebrate the birth of the owner's first son. Since the beginning it has valued kimoto brewing, which draws on lactic acid bacteria from the air, aiming for depth with a clean finish. The on-site Kuratanbokan museum explains the process with photos and panels and has a tasting corner. The brewery names Goto Hideyuki as its toji.
