Where to buy

What kind of brewery is it?

The family's trade began in Omi-Hino, in present-day Shiga Prefecture, and from the early Edo period its members travelled as merchants under the name Hinoya Sahei. Later they opened a shop in Hida, settled there, and began brewing sake alongside their trade. The family took up brewing as its business in the Meiji era, and in 1956 it was incorporated as Tenryo Shuzo Co., Ltd. The current owner is the eighth generation since brewing began.

What makes it distinct

Water
Brewing uses groundwater from the Hida mountains, pumped up from 30 metres underground. The brewery describes its water as soft and a natural sterile water suited to sake brewing.
Ingredients
All the rice is sake-brewing rice, mainly Hida-grown Hidahomare. The rice is milled in-house.
Yeast
Yeast is chosen to suit the style sought, and flower yeast is used for the aromatic ginjo-style sake.
