Tanabe Shuzo (田辺酒造有限会社)
Tanabe Shuzo is a sake brewery in Eiheiji, Fukui Prefecture, that makes Echizen Misaki. It works through the cold season with hand-operated steps from steaming rice to pressing the moromi. It was founded in 1899. KIKI lists one of its bottles.
What kind of brewery is Tanabe Shuzo?
Tanabe Shuzo works in Matsuoka, Eiheiji, where sake brewing flourished under the old Matsuoka domain as an industry the domain encouraged. The brewery still steams rice in traditional wakama kettles and presses all of its moromi by hand in sacks, in a cold-season brewing done by hand throughout. The toji trained in the Nanbu school and took the post in 2012. A sake corner was planned to open from May 2024.
