Sudo Honke (株式会社須藤本家)

Sudo Honke is a sake and shochu brewery in Kururi, Kimitsu, Chiba, using naturally flowing spring water from its own grounds. Its flagship brand is Amanohara. It was founded in 1885.

What kind of brewery is Sudo Honke?

The brewery was founded in 1885 along the Obitsu River. The fourth-generation head later moved it to Amanohara in Kururi in search of better brewing water. Just after the move the Great Kanto Earthquake struck; the old site was flooded, but the koji had already been carried to higher ground in Kururi, so brewing continued. The current head, Masatoshi Sudo, has been directly involved in brewing since 2012 and also works on shochu. In 2018 the company obtained a whisky production license, the first in Chiba Prefecture.

Water
Self-flowing Kururi water rises on the brewery grounds and is used in every step, from rice washing and moromi to tank cleaning.
Other
The brewery installed new plastic plates in its automatic press filter and a modern acidity meter to keep quality stable.
