What kind of brewery is it?

The brewery was founded at the end of the Edo period under the shop name Iseya Honten. In the late 1980s it switched all its brewing to junmaishu, becoming the first all-junmai brewery after the war. The name Shinkame comes from a divine messenger turtle said to live in a pond once behind the brewery. Hikomago is used for sake aged three years or more. After starting to use organically grown sake rice, the brewery found that the rice clearly affected fermentation and the vitality of the sake, and it has since stressed good rice as the basis of its sake.
