History
Founded in 1869 (Meiji 2) as Daikokuya Shimizu Seizaburo Shoten in the Wakamatsu district of Suzuka near the sea; the founder is said to have been a fishing-net owner. The area offered subsoil water from the Suzuka mountains, rice from the Ise plain and a port for shipping sake to Edo and Osaka. In the 1990s the brewery struggled while relying on contract brewing, then decided to create a new brand; after Suzukagawa it developed the limited-release Zaku. President Shinichiro Shimizu and toji Tomohiro Uchiyama have worked together closely, installing small temperature-controlled stainless tanks and refining a clean taste by reducing off-flavors. The brewery is said to carry on the Ise toji tradition with Suzuka-born brewers.
