The brewery was founded in 1830 and the current head is the eighth generation. It consists of an old building surviving from the Meiji era after a fire and a new brewing house completed in 2016. Since 2014 it has brewed with the traditional kimoto and yamahai methods, and in recent years it has also grown its own rice for sake.
What makes it distinct
- Water
- The brewing water is well water called Kansui from the mountain behind the brewery, a soft water of hardness 0.2, used in every step from rice washing to brewing.

- Kimoto and yamahai brewing has been practised since 2014.
- Also
- The brewery sits in a mountain valley at 350 m altitude.
