Seto Shuzoten (株式会社瀬戸酒造店)
Seto Shuzoten is a sake brewery founded in 1865 amid the rice fields of Kaisei, Kanagawa. It makes a wide range of sake and aims for bottles that pair with cuisines from around the world.
What kind of brewery is Seto Shuzoten?
The brewery stands in Kaisei on the Ashigara plain, in an area once busy with sake rice growing. Its flagship Sakata Nishiki was popular, and at its peak it brewed 600 koku. Because it became hard to secure a toji and brewers, in-house brewing stopped in 1980. In 2018 the old brewery was demolished and a new one built, restarting brewing after 38 years. The revived Sakata Nishiki is made with resident house yeast, alongside the Setoichi series and Ashigarigo, made with yeast taken from hydrangea, the town flower.
