What kind of brewery is it?
The brewery began in 1688, when Yamashita Shozaemon, the first generation and a magistrate of the Hirado domain, started brewing at the present site on the domain's order. The family residence served as the lord's lodging and is now a prefectural historic site. The original brewing house, said to date from that time, is a prefectural cultural property. The thirteenth generation now runs it, keeping traditional methods while also responding to modern tastes. It was incorporated in April 1954.

- Sake rice harvested locally in Eymukai arrives each November, starting the brewing season.
- Style
- Koji is made by hand and pressing is done with the traditional fune press.
