What kind of brewery is it?

Seiryo Shuzo traces its origins to a family house that for generations held the keys to the village headman's rice storehouse during the Edo period. After the headman system was abolished, the ninth head of the house began brewing sake in Meiji 10 (1877). The first sake was a junmai made with well water from the brewery and local rice. Brewing stopped during the Second World War, and the brewery grew through the high-growth era. Today it keeps to local water, rice and the microbes living in the brewery.
