The brewery was founded in 1724 and in the late Edo period became the supplier of sake offerings to Shiogama Shrine. The present head is the 13th-generation Saura family owner. Besides the main brewery in Shiogama it opened the Yamoto brewery in Higashimatsushima in 1994. Toji in the Nanbu tradition emphasise careful koji making and long, low-temperature fermentation, aiming for sake that suits meals. It is also reviving Kyokai No. 12 yeast in contemporary sake.
