What kind of brewery is it?
Kinzangura was established on the site of the Kushikino gold mine, which once supported the Satsuma domain, as a place to pass on Satsuma's cultural spirit and the roots of honkaku shochu. The tunnels, dug for over 350 years, keep a steady temperature all year and suit storage and aging. Shochu is made here with pots for fermenting and storing, and an Edo-period style kabuto-gama still has been revived. A sake brewery was added because sake had not been made in Satsuma for a long time, with the aim of helping shochu evolve.
