What kind of brewery is it?
The brewery was founded in 1661 (Kanbun 1) under the name Hanadaya. Later, Ku Amano, who took over Hanadaya and became the first head of the brewery, renamed it Sasaichi Shuzo in 1919 (Taisho 8) and united the two businesses. In the 2013 brewing year the brewery retired its mass-production equipment and returned koji making and the shubo process to hand work. It also installed new rice washing and steaming equipment and two sake presses to focus on higher-quality sake.
