The brewery was founded in 1702 at Sawai in Musashi Province, on the road linking Edo and Koshu. The name Sawanoi comes from the place name Sawai, where abundant water runs as streams. Its brewing water comes from a spring in a cave dug into the bedrock of Okutama. Brewery tours began in 1966, in 1984 it started training in-house toji, and the era of Echigo toji ended in 2000. Around the brewery today are a tasting house, restaurants serving tofu and yuba made with brewing water, and cafes.
