What kind of distillery is it?

Nekka LLC was set up by four rice farmers and one brewer, and the distillery began in a renovated old traditional house in Tadami in 2017. The company received a special-product shochu licence that year and started making rice shochu under the Nekka name. Its own paddies supply the rice, and mountain spring water is used for the paddies. The yeast was chosen with the brewing course of the Fukushima Prefectural High-Tech Plaza, and the moromi ferments for 25 days before low-temperature distillation at 30°C or below. A licence for sake for export was also granted in 2020.

The moromi is brewed in the same way as sake and then distilled at 30°C or below.
Also
The moromi is fermented for 25 days.
