What kind of brewery is it?
Sake making began in 1916 as a privately run operation. Tanaka Shuzoten was established in 1948, and in 1971 the company was renamed Niseko Shuzo with Minato Mizuguchi as president. In 2015 the brewery moved to using only Hokkaido-grown rice, and by 2019 premium-grade sake (junmai ginjo and junmai) made up 70 percent of output. In 2020 it launched a sake project with Kutchan Agricultural High School.
