What kind of brewery is it?

The brewery was founded in Hirado in 1895 by Kokichi Mori under the trade name Komatsuya. It was first known for the sake Kiku no Tsuyu and a shochu, then incorporated in the 1950s-60s as Mori Shuzojo, and its main brand shifted through Honen to Hiran. The name comes from an old name for Hirado. The fourth-generation president now brews under the theme of passing on the craft and building ties, using spring water from the foot of Saikyoji temple and local rice.
