What kind of brewery is Matsui Shuzo?
Matsui Sake Brewery traces its founding to 1726 in Kasumi, Tajima Province, now in Hyogo. In the late Edo period the brewery moved to Rakuchu in Kyoto, where a fire in 1864 destroyed it. Tram expansion forced another move, and the 13th owner chose the current site in Yoshidakawaramachi, Sakyo Ward, for its good water. During the war the brewery was merged and renamed for a time, and after the postwar subway works its well water could no longer be used, so brewing paused while the licence was kept. The 14th owner revived brewing in 2009 at the Kamogawa brewery, with his son as brewer and a toji from Noto guiding the work.
